What is green bean casserole?

This recipe came to be in 1955 by a Dorcas Reilly whom just happened to work at Campbell soups. How handy that worked out for Campbell’s as the green bean casserole became more and more popular!

You will notice ingredients by Campbell soups listed in many recipes online. Talk about a win for that company!

The original recipe started with canned green beans, cream of mushroom soup, and French fried onions.

Love it or not is the question

Honesty time! We were not big fans of green bean casserole growing up. Nor did the canned variety make a stellar impression once we did try it.

Only in the last few years have we really enjoyed this casserole as a side dish. The biggest reason?

We adjusted the recipe to meet our tastes. For example, we use our Homemade Turkey Stock instead of cream of mushroom soup. We may have mentioned in past blogs but really, we are not fond of mushrooms in this house.

Please note: the recipe calls for chicken broth. However, if you have some turkey or chicken stock made up, use it instead!

Homemade Green Bean Casserole

Don’t let the word Homemade scare you because this recipe is easy to follow and make for yourself!

The basic ingredients are as follows:

  • 1 small onion
  • 6 tablespoons butter, divided
  • 1/4 cup all-purpose flour
  • 1 cup whole or 2% milk
  • 1/2 cup chicken broth
  • 1 teaspoon reduced-sodium soy sauce
  • 1/4 teaspoon tabasco
  • one 1 package (16 ounces) frozen French-style green beans, thawed and drained
  • a cup shredded cheddar cheese
  • 1 cup crushed french-fried onions

We do not like mushrooms but if you’re a mushroom lover, you can definitely add in some to sauté with the onions.

Directions

  1. Preheat oven to 350°. In a small skillet, sauté onion in 2 tablespoons butter until onion is crisp-tender, 4-5 minutes; set aside.
  2. In large skillet, melt remaining 4 tablespoons butter; whisk in flour until smooth first and then whisk in milk, broth, soy sauce, pepper sauce and salt. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from heat and then stir in green beans and cheese.
  3. Spoon the bean mixture into a greased 1-1/2-qt. baking dish.
  4. Bake, uncovered for 20 minutes. Top with french-fried onions. Bake for another 20 minutes.
