Since this is a strata, remember that is needs time in the fridge to soak up the eggs and and chicken stock, it really is best to chill overnight. So plan ahead, and just make it the day before if possible.
Layer your dry ingredients followed by the egg soak, pat down, then let strata chill in the fridge
In a time crunch? It is also okay if you make it the morning of, and leave in fridge all day. It just loses some of the time for the foccaccia to absorb all those yummy flavors.

Can’t find smoked chicken at your supermarket deli? Smoked turkey is also good in this Smoked Chicken and Asparagus Strata. For the Havarti, the recipe calls for dill Havarti, which is not a favorite of ours.
Instead, we used plain Havarti, which is much more to our liking. Now, the recipe states to put the Havarti on top during last 10 minutes of baking. However, we really like our strata with the cheese melted through out the entire dish. First, we mixed a cup of cheese in with the chicken. Second, we sprinkle the rest of the cheese on the top, for the last bit of baking.

Smoked chicken and Asparagus Strata
Ingredients
- 1/2 cup finely chopped onion
- 1/3 cup finely chopped red sweet pepper
- 2 tbsp butter
- 8 ounces asparagus, trimmed and cut into 1-inch pieces
- 1/4 cup chicken broth
- 4 cups smoked chicken or turkey, cut into bite-size cubes
- 3/4 cup mayonnaise
- 1 3/4 cups milk
- 1 3/4 cups chicken broth
- 6 eggs
- 2 tbsp snipped fresh chives
- 2 tbsp country Dijon mustard
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 8 cups cubed garlic herb focaccia ( 1-inch cubes )
- 6 oz dill ( or plain ) Havarti cheese, shredded ( 1 1/2 cups )
Instructions
- In a large skillet cook onion and sweet pepper in hot butter over medium high heat for 3 minutes, stirring occasionally. Add asparagus and the 1/4 cup chicken broth. Cover and let simmer about 3 minutes or until the asparagus in crisp tender. Transfer to a large bowl; let cool slightly
- Add smoked chicken and mayonnaise to the vegetable mixture, mix well. In another bowl, whisk together milk, the 1 1/4 cups chicken broth, the eggs, chives, mustard, salt, and pepper.
- Lightly grease a 3 quart ( 9x 13 ) rectangular baking dish. Spread half of the focaccia cubes in the prepared dish. Top evenly with the chicken mixture. Spread the remaining focaccia cubes over the chicken mixture. Carefully pour the egg mixture over entire pan. Cover dish tightly with plastic wrap. Refrigerate overnight.
- Preheat oven to 350 degrees F. Before baking, let strata stand for 15 minutes at room temperature. Uncover, bake for 40 to 45 minuted or until set and light brown. Sprinkle with Havarti cheese, bake for 10 mor minutes or until cheese melts.
