Our Crockpot Pot Roast is slow cooked in the crockpot along with onions, garlic, and carrots. Simmering 8 hours in savory juices of meat and vegetable, this Pot Roast is fall apart perfect when done.

The meat comes out tender and melt in your mouth good. Thank you to our beloved crockpot for doing such a wonderful job! We love you!

The added flavor of spices along with garlic cloves and onion combine to create a perfect broth that begs to be made into gravy. Or, perchance, a delightful and rich au jus for tomorrow’s French Dip using leftovers?

Carrots are a must in our house but don’t forget the other options too.

Don’t forget about the sweet yet earthy taste of carrots that are soft but firm. We love how the carrots turn out in a pot roast! Our mom always adds celery sticks when she makes a pot roast. Similarly, we sometimes add a bay leaf from our bay leaf tree. Each brings in a unique flavor to the mix.

Each to their own taste buds, right?

Potatoes and the many ways to cook them…only a few are listed.

Last but no less important are the potatoes! We vary in how we cook the potatoes. In this recipe, it calls for mash potatoes. The thick creamy potatoes with melted butter compliments the savory flavors of our Crockpot Pot Roast.

We do cook our potatoes on the side, as this recipe calls for. However, this is not the only way to cook potatoes! Yes, it’s true…there is more than one way to cook a potato.

Ok, seriously, the list is endless with what you can do with potatoes!

Adding potatoes right in with the Crockpot Pot Roast delivers another layer of wonderful flavor. The potatoes seem to lock in all the flavor of this simple dish. Add in a pat of butter, and yummy!!

How to choose your meat for a good roast?

Perhaps the most important key to a make or break Pot Roast is the meat. It is pretty hard to mess up a pot roast, especially a Crockpot Pot Roast…but the wrong choice of meat or the wrong cut can lead to a path of sadness and tears come dinner time.

If you have to get out the chain saw, you know that you did not choose wisely!

We like to use a Beef Top Round Boneless Roast, when we can find them. This particular roast is about 3.5 pounds, for just over $8.00 that day. Yes, it was on sale, so we snapped it right up!!!

The process of cooking a Crockpot Pot Roast

After hours of laboring over a hot stove, tediously tending to each and every herb and vegetable, stirring until your arms fall off, dinner is served.

Just kidding!

Heck no, there are no long sweaty hours laboring here! That is what our beloved crock pot is for! It does all the hard work. All we do is throw a bunch of ingredients into the crock pot, set the timer, and then go about our business.

We like to cook our Crockpot Pot Roast slowly and over a longer period of time. Remember, melt in your mouth is the goal here. However, if you are short on time, then you can set the crock pot on high to cook for a short period of time.

The roast goes into the crockpot around 10 .a.m. and is ready around 6 p.m. Aside from the prep time involved in throwing meat and veggies into the pot, the only major thing you need to do is get the mashed potatoes cooked.

Trust us, it is so well worth it to have mash potatoes. If you’re short on time then you can add the potatoes into the slow cooker along with everything else.

The nitty-gritty bitter truth about life

Now, if you’re really short on time and the day is kicking your butt, you can always cheat and make instant mashed potatoes. What!?!?! No, say it isn’t so!?!

Reality time, some days are just brutal and long. By the time dinner comes along, it takes too much energy to even breathe, let alone peel, cook and mash potatoes.

Don’t judge us. We admit, we have used instant mashed potatoes!

This is one of our favorite comfort foods. Served with a big pot of mashed potatoes and gravy made from the roast, this Crockpot Pot Roast is sure to fill you up. We love the ease of using a crock pot to make such a simple yet savory meal.

Our Crock pot Roast is slow cooked in a crockpot along with onions, carrots, and garlic. Add in homemade mash potatoes with this pot roast!

Ingredients

  • 1 Beef Top Round Roast 2 to 4 pounds( Size depends on how many people, and if you want leftovers for French Dip sandwiches )

  • 8 – 10 carrots, peeled

  • 2 -3 large onions, peeled and halved

  • 1 head of garlic, with the top chopped off

  • 1 can French Onion Soup plus 1/2 can of water

  • Coarse ground salt and pepper to taste

  • 1 – 2 tbsp Garlic Powder

Directions

  • Spray Crockpot with non stick cooking spray, set heat to low.
  • Add the roast and the French Onion soup and water.
  • Season well with the salt, pepper, and garlic powder.
  • Place the vegetables over the top of the roast, and cover with the lid.
  • Leave it alone for 8 hours!!
  • To serve, remove the veggies to a platter, and carefully remove the roast to another platter. Use the liquid to make a rich gravy, and serve over mashed potatoes.

Notes

  • Reserve some of the au jus for French Dip sandwiches if desired.
