This Tuscan Garlic Chicken has the most amazing, delectably creamy sauce! The garlic, Parmesan, sun-dried tomatoes, Italian herbs meld together beautifully!

The vibrant colors from the sun-dried tomatoes and fresh spinach in this dish is very eye appealing and aroma will have you drooling before you can get it dished up!

Making our Tuscan Garlic Chicken

This is a very easy dish to make although there are several steps in the process. We promise, you won’t be slaving over a hot stove since the break of dawn!

Getting started

Cook the sliced chicken in a large skillet with the olive oil over medium high heat for about 3-4 minutes on each side, until lightly browned and no longer pink in the center. Remove from pan and set aside.

Now for that amazing sauce!!

Add the heavy cream, milk, chicken broth, garlic powder, Italian seasoning, and Parmesan cheese to the pan. Immediately begin to whisk over medium heat until it starts to thicken. Add in the chicken and chopped sun-dried tomatoes, reduce heat to low, and allow to simmer, stirring often.

Pasta time

Meanwhile, have a large pot of water going for your pasta. We used spaghetti, but feel free to use any cut of pasta. When the pasta is almost al dente, toss the spinach into the sauce. We add it at the end, simply because we don’t want to over cook it. Just wilt it, keep that beautiful green color.

Last minute check

Check the sauce for last minute seasoning. Is it thick enough? Or too thick for your taste? Remember, you want plenty of sauce to coat the pasta, and there may be leftovers!! If it doesn’t seem thick enough, toss in another 1/3 cup of Parmesan and whisk well. If it seems too thick, simply stir in another 1/3 cup of milk.

Drain pasta, and serve. Garnish with another sprinkle of Parmesan, if desired.

Tuscan Garlic Chicken Is a rich and vibrant dish full of tender, chicken, creamy sauce, sun-dried tomatoes, Parmesan cheese over pasta

Ingredients

  • 2 pounds boneless skinless chicken breasts, thinly sliced

  • 2 tbsp olive oil

  • 1/2 cup heavy cream

  • 1/2 cup milk

  • 1 cup chicken broth

  • 1 tbsp garlic powder

  • 1 tsp Italian seasoning

  • 1/2 cup Parmesan cheese, plus extra for garnish

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 cup spinach, rinsed and chopped

Directions

  • In a large skillet, heat the olive oil over medium heat. Add in the chicken and cook for about 3-4 minutes per side, until lightly browned and no longer pink inside. Remove from pan and set aside.
  • To the same pan, add in the heavy cream, milk, chicken stock, garlic powder, italian seasoning, and Parmesan cheese. Whisk together until the mixture starts to thicken. Add in the chicken and sun-dried tomatoes and reduce heat to a simmer, stirring often.
  • Meanwhile, have a pot of water boiling for pasta. We used spaghetti, but you can use linguine, or even fettuccine noodles as well. Drop the pasta, and cook until al dente. Just before the pasta is about done, check the sauce. Does it need to be thicker, or is it too thick for your taste? Add another 1/4 cup of Parmesan cheese if it seems too thin, whisk well. If the sauce seems too thick, add in another 1/4 cup of milk, whisk well. Add in the spinach at this time, gently tossing it in, it only needs to wilt.
  • Drain the pasta, and plate, making sure each serving has a generous amount of that beautiful sauce.
