Crock-Pot Meatballs, Tomatoes and Onions. So simple sounding but so good. This recipe has been a family favorite since we were kids. It is so easy to make, yet so satisfying. Now, as an adult, it is still a favorite and one of our go to comfort foods.

Crock-Pot Meatballs Tomatoes and Onions ingredients

You can’t get much simpler then this! The ingredients are as follows: hamburger to make the meatballs, 2 cans stewed diced tomatoes, 1 large onion, and rice. That is it.

Spices per taste

When we were growing up, Mom loved to make this recipe often. She still loves to make this recipe to this day. Mom uses salt and pepper when she makes her crock-pot meatballs tomatoes and onions over rice in her recipe.

However, we like garlic (garlic…..yummy garlic….) a lot. Therefore, we add some garlic when we are making the meatballs. You can adjust the spices according to your personal taste.

Easy recipe instructions

The prep time for this Crock-pot Meatballs Tomatoes and Onions recipe is very simple and quick. Have your ingredients and crock-pot ready. Open the 2 cans of stewed diced tomatoes (drain one can of juice first) and pour into the bottom of the crock pot.

TIP: Make sure you use regular stewed diced tomatoes otherwise the added flavors/spices throw off the whole taste.

Tip: We drain one can of the tomatoes before pouring in so we don’t end up with soup!

Slice the large onion and layer on top off the tomatoes. Mom likes to add salt and pepper to the onions at this point. We like to add our spices to the actual meatballs.

The last step is the above mentioned meatballs. In a separate bowl, we add our spices to the hamburger and mix loosely. Then we start making our meatballs and adding them as the top layer of our Crock- pot Meatballs Tomatoes and Onions meal.

Tip: Make the meatballs about the size of your palm pressing well. We want the meatballs to hold their shape while cooking.

In our house, the crock-pot is one of our most used devices. It can’t be much easier then slapping some ingredients in to the pot, turning it on, then forgetting about it for several hours!
