Growing up on mom’s simple homemade stuffing

As mentioned in our Crockpot Sweet Potatoes blog, we grew up with more traditional holiday meals. There is an air of fondness when thinking back to our younger days. Our Thanksgiving dinners growing up may seem plain nowadays but, back then, it was magical, just magical.

Now, we look back with affection as we celebrate the return of simple things, even if it is just a recipe that mom made back in the day.

The ingredients for this recipe are pretty basic. You have your dried bread cubes. You can dry your own bread but we did not. Considering that the recipe calls for 12 cups worth of dried bread cubes, we chose store bought.

The rest of the ingredients include eggs, chicken broth, onions, and celery. See recipe below.

Tip: mix the eggs with the one of the cans of chicken broth. It pours out and mixes smoother.

It’s all about the herbs for this homemade stuffing mom used to make!

Most stuffing recipes are pretty similar in respect to ingredients. Some stuffing will be all dolled up with pecans, raisins, or what have you. But stuffing is stuffing.

What does make a difference is the herbs and spices used in a stuffing recipe.

We used poultry seasoning, fresh sage, fresh thyme and salt and pepper. You can make your own Poultry Seasoning or buy it. It is a common pantry item so check your cupboards first!

Poultry Seasoning is a combination of spices and herbs including sage, rosemary, and thyme. The blend of herbs pair well with turkey (and chicken) without overpowering the natural flavor of the meat.

We also added finely diced thyme and sage to the mix as this seems to accentuate the overall flavor. We grow our own herbs but if you do not have access to fresh herbs then you can substitute dried herbs.

The great debate: is it dressing or stuffing?

We never realized this until now but apparently people do bicker on the correct usage of the terms dressing and stuffing. Both are basically the same in ingredients but its HOW and WHERE the mix cooks that is the telling.

In simple terms, if the stuffing is stuffed up the turkey then it is a stuffing.

We prefer to cook our stuffing in a casserole dish (which would technically make it dressing), or even in the crockpot. Yet we still call it stuffing.

Mom probably has cooked the stuffing in the turkey before but knowing us, or at least me, we wouldn’t eat it.

It’s the thought and image that just didn’t hit it off on a high note for us…unless you count the girlish squeals from at least one kid totally grossed out! Yuck!

We are still going to call our stuffing stuffing. Even if we cook it in a casserole dish!

Safety tip:

As with all meat, it is best to use a meat thermometer to ensure that it is done. No one wants food poisoning during the holidays!

For those that do put the stuffing inside their turkey then make sure to cook the stuffing center to at least a 165 degree F as well.

This is due to all the natural juices from the bird that drip down into the stuffing so it is a good idea to double check and make sure everything is completely done.

This is a recipe that can be made ahead of time to help cut down on the stress load come Turkey day. It freezes well and is easy to warm up later! We love the flavors and the easiness of mom’s stuffing recipe.

It is a big must for our Thanksgiving dinner!

Mom’s Simple Homemade Stuffing brings back memories of past holidays and simpler times. This savory stuffing is a perfect blend of herbs, spices and texture that is anything but simple!

Ingredients


  • 2 small onions diced

    4 stalks celery, finely sliced

    ⅔ cup butter

    2 teaspoons poultry seasonings  

    1 tsp fresh sage, finely chopped

    1 tsp fresh thyme, finely chopped

    1/2 tsp black pepper

    salt to taste

    12 cups bread cubes-dried

    2 cans of chicken broth

    2 eggs, beaten with one of the cans of broth

Directions

  • Preheat oven to 400 degrees F. Spray a casserole dish with non-stick cooking spray.

    In a large bowl, combine the bread cubes, onion, celery, poultry seasoning, thyme and fresh sage.

    Pour in the chicken broth mixed with eggs, as well as the other can, along with the butter.

    Stirring carefully, mix all of the ingredients well. Pour into prepared pan, and cover. If your casserole doesn’t have a lid, tin foil will work great. Bake for 35 minutes, remove lid or foil, and bake for another 10 minutes.
