These Orange Ricotta Pancakes we decided to review are so good! This is no plain or ordinary pancake that comes in a box. Okay, to be honest, even we have that handy pancake mix in the cupboard. However, there is a world of difference between adding water and pancake mix together and these Orange Ricotta Pancakes.
It’s all about the ingredients
What makes this pancake stand out is the use of ricotta for texture and orange for flavor. The orange juice and zest make for a lightly sweet flavor without adding any major tartness. However, the ricotta is what really sets this pancake apart!
What is ricotta and why is it in a pancake?
The ricotta makes the pancakes light and fluffy. The ricotta texture also adds a creaminess to the texture of the pancake. Ricotta is a soft curd made from whey (the leftovers from cheese production). When I saw this recipe, I knew we had to review it, and we were not disappointed!

This recipe is easy to follow. First, you combine dry ingredients in one bowl. Second, you combine wet ingredients into another bowl. Third, you combine everything together. Last, get them on the griddle to cook. These were truly easy to make and so worth it.

You don’t taste the ricotta, it adds a magical richness, a creaminess to the cakes. It tends to make the Orange Ricotta Pancakes, or any flavor for that matter, more fluffy, more luxurious. Whoever came up with the idea of adding ricotta to pancake batter is a genius!!
Conclusion
These pancakes are divine with just some real butter on them. In addition, they are also wonderful as a snack later (if you are lucky enough to have some leftover). We added butter and syrup but it is great without anything added. We wouldn’t change a thing in this recipe.
Orange Ricotta Pancakes

These Orange Ricotta Pancakes are perfect for a change of pace for breakfast. A good option for vegetarians as well!
Ingredients
- 1 1/2 cups all purpose flour
- 3 tbsp sugar
- 1 1/2 tsp baking powder
- 2/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1 cup part skim ricotta cheese
- 3/4 cup 2% milk
- 1/2 tsp orange zest
- 1/2 cup orange juice
- 1/4 cup melted butter
- 1/2 tsp vanilla extract
- Maple syrup and confectioner’s sugar, optional.
Instructions
- In a bowl, whisk together the 1st five ingredients. In another bowl, whisk egg, cheese, milk, orange zest, orange juice, melted butter, and vanilla until blended. Add to dry ingredients. Stir until just moistened.
- Lightly grease a griddle; heat over medium heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with maple syrup and confectioner’s sugar.
