This Citrus Roasted Steelhead recipe is a favorite of mine, and Rochelle’s. Yvonne, bless her, does not like seafood, and cannot be in the house when we have it. So I plan ahead, and we have this or Roasted Salmon when she is at work.
Time to experiment with the spices
This Citrus Roasted Steelhead is one I worked with Rochelle on to get just right. Rochelle loves the flavor of lemon pepper, but not the peppery part. We experimented with different spices and amounts until we came up with something we could agree on.
Rochelle loves to help me get the fish ready to bake. With freshly washed hands, she dives right in. She is such a joy and always wants to help.
Safety tip: always wash your hands before and after dealing with any kind of raw meat.
Citrus Roasted Steelhead recipe ingredients
For the Citrus Roasted Steelhead, we like to use lemons, limes, and coarse ground kosher salt. I generally roll 1 lemon and 1 lime on the counter, to see how juicy they feel. If they don’t feel very juicy, I simply pop them in the microwave for about 15 seconds, and roll again on the counter.
Tip: Rolling and or briefly heating the citrus helps release the juices.
We used about half of each fruit to squeeze over this particular piece of fish, and then sprinkled with kosher salt. Because we like the fresh flavor of the lemon and lime on the steelhead, we also sliced part of the rest of the fruit to place over it while roasting.
To butter or not
Now, I did get a couple of herb butter pats at the seafood counter when I got the fish. I love the stuff, it adds a nice accent to the fish, without overpowering the flavor of the fish itself.
If you don’t care for herbed butter, feel free to use plain salted butter, or, if not wanting the extra calories, just leave it out entirely.

We generally serve it with steamed broccoli, or even Brussel sprouts pan seared with garlic. Any vegetable will do as a side dish so choose out your favorite. It just seems fitting to serve fish with a vegetable.

Citrus Roasted Steelhead
Ingredients
- 11/2 pounds Steelhead fillet
- 1 lemon
- 1 lime
- 1 tsp coarse Kosher salt
- Herbed butter or plain salted butter, 2 pats (optional)
Instructions
- Preheat oven to 450 degrees F
- Line a baking sheet with aluminum foil, fold the sides up to form a tray. This prevents leaking, and helps keep the pan clean.
- Place the Steelhead skin-side down on the aluminum foil.
- Juice 1/2 of the lemon and lime over the fish, per taste, top with thin slices of each fruit if desired.
- Sprinkle lightly with kosher salt per personal taste.
- If using the butter, break up into small pieces and scatter over the fish
- Bake covered with another sheet of aluminum foil, for 15 to 20 minutes, until fish flakes easliy.
- Serve with veggies of your choice, and enjoy!
