This dish has all of the classic flavor of Caprese; fresh basil, mozzarella, and tomatoes. Add in some garlic ( mmmm, garlic ) spinach, a couple more spices, super good!!

Pros and cons and adjustments of this One Pot Caprese Pasta recipe
This recipe is delicious and easy to make. It cannot get much easier than throwing everything into one pot to cook! The recipe held all of our favorite ingredients that complimented each other well.
There are, however, a couple things we might adjust the next time we make it.
One thing that we noticed was it took longer than 8 to 10 minutes for the pasta to cook, which was odd. We have done plenty of one pot pasta dishes, and have never needed more than the time specified on the directions.
The other being that there was a lot of cooking liquid left over, which is also unusual for us. I think next time instead of only 8 ounces of pasta, we might do about 12 ounces.
As for adding in the fresh spinach and basil at the beginning, we are going to be adding them about half-way through the cooking time from now on. The fresh spinach became overcooked and lost some flavor.
The balsamic vinegar is a nice addition, but next time we will cut it back to just 1 tablespoon. Balsamic vinegar is a really potent flavor, and did overpower the wonderful Caprese flavors in this dish.
Conclusion
We like the potential of a one pot recipe and the ingredients worked well together. The instructions for the recipe are easy to follow, but, as mentioned above, we would adjust this caprese recipe the next time we make it.

One Pot Caprese Pasta
Ingredients
- 8 oz dry linguine
- 1 pint cherry tomatoes, halved
- 1 cup baby spinach leaves
- 1/4 cup basil, chopped
- 3 cloves garlic, thinly sliced
- 1/2 tsp oregano
- 1/2 tsp red pepper flakes
- 2 tbsp extra virgin olive oil
- 4 cups vegetable, chicken broth, or water
- 1/2 cup fresh mozzarella bocconcini
- 2 tbsp balsamic vinegar
- Kosher salt and freshly ground pepper to taste
Instructions
- In a large pot or deep pan, arrange pasta, tomatoes, spinach, garlic, and basil. Sprinkle with salt, pepper, oregano, red pepper flakes, and drizzle with olive oil.
- Pour 4 cups of broth or water into the pot and bring to a boil. Reduce heat to medium and cook, stirring occasionally, until liquid is nearly evaporated and pasta is al dente, 8-10 minutes.
- Remove from heat and stir in mozzarella and more basil, if desired. Adjust seasoning as needed, drizzle with balsamic vinegar, and enjoy!
