We continue on our quest to learn of good diabetic recipes and ideas so that our Dad can enjoy dessert too. As mentioned in previous blogs such as our Baked Apple Pie with Stevia, our Dad is a diabetic.

We feel strongly in finding ways for diabetics like our Dad and our readers to be able to have healthy or alternative options when in comes to cooking. Our Dad uses Splenda with Stevia so that is where most of our recipe alternatives stem from.

As it is the holiday season, we made sure to include a diabetic friendly recipe in our menu planner. Our family loves almost anything gingerbread related so we knew a gingerbread cake with Splenda would work well.

Making the Christmas Gingerbread with Splenda

Again, this is an easy recipe to follow and to make!

Make sure you read the directions all the way through and have all the ingredients listed. Also, make sure you have a 9 inch square pan.

Preheat oven when you start as the prep time is pretty quick. In other words, you can rip this cake out in no time.

First, cream the sugar and butter together then beat the eggs and cream cheese in before adding the molasses to the mix.

Tip: When measuring the molasses, spray the measuring cup with cooking spray. This will ensure that the molasses comes right out of the cup.

P.S.This is also a handy trick for peanut butter and honey.

Next, sift together the flour and spices then blend into the creamed mixture

Lastly, stir in the hot water.

After that, pour the gingerbread batter into the pan and bake for 40 minutes.

Important note!!! Let the cake cool down completely before trying to transfer to another platter…lest your Christmas Gingerbread with Splenda cake is a sunken and broken mess.

Christmas Gingerbread with Splenda a Diabetic friendly dessert that is so moist and full of the gingerbread flavor we all love!

Ingredients

  • 1/2 cup Splenda No Calorie Sweetener Granulated

  • 6 Tbsp butter

  • 1 egg

  • 1 cup molasses

  • 8 oz cream cheese spread I used pumpkin flavor

  • 2 1/2 cups all-purpose flour

  • 1 1/2 teaspoons baking soda

  • 1 1/2 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon salt

  • 1/2 cup hot water

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.

  • In a large bowl, cream together the sugar and butter. Beat in the egg and cream cheese spread, then mix in the molasses.

  • In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  • Make sure your oven rack is in the center, and bake gingerbread for 40 min. Check with a butter knife in the center to check if it is done. Allow to cool for at least 45 minutes before using the parchment paper to remove from pan. Place back on the rack to cool completely before transferring to a serving platter.
  • Serve with fresh whipped cream if desired. Enjoy!
