Key Lime Mousse Cups

Key Lime Mousse Cups are the perfect Diabetic friendly dessert. Delightfully sweet with a mellow key lime tartness and made in mini phyllo tart shells, they are perfect! Not to mention easy to make!

These little desserts are a nice change from the same old chocolate dessert or candies usually given on Valentine’s day. They have a wonderful light texture, great flavor, and are simply elegant in presentation!

Diabetic friendly Key Lime Mousse Cups

As we have mentioned in our previous blogs, we are always looking for diabetic friendly desserts. We do this because our Dad is diabetic and we know that some of our readers are too. There are many options available nowadays for diabetic recipes.

These pretty little tarts are diabetic friendly, but you would never know! The reason is there is no added sugar. In addition, you don’t even have to worry about artificial sweeteners either.

The making of the dessert

The tart shells are crisped in the oven before anything else is done, making them perfect to refrigerate, and not get soggy bottoms. This can be done ahead of time. Bake for about 5 minutes at 350 F.

The best part is that you can BUY the 2 packages (1.9 ounces each) frozen miniature phyllo tart shells! Happy days and stress free moments there!

The filling is easy to put together:

In a large bowl, beat the cream cheese, milk and juice until smooth; fold in whipped cream.

There is a little bit of time involved when filling the tart shells because the little cups are so small. In other words, we didn’t want to make a mess. Instead, we piped the filling into them. Trust us, it is much easier and less messy.

We garnished ours with key lime zest, raspberries, miniature roses, and our Simple Raspberry Coulis but the possibilities are endless! So have fun!

Ingredients

  • 4 ounces cream cheese, softened

  • 2/3 cup sweetened condensed milk

  • 1/4 cup Key lime juice

  • 1/2 cup heavy whipping cream, whipped

  • 2 packages (1.9 ounces each) frozen miniature phyllo tart shells

  • Fresh Key lime zest, for garnish, if desired.

Directions

  • Preheat oven to 350 F. Place frozen tart shells onto a baking sheet and bake for 5 minutes.
  • In a large bowl, beat the cream cheese, milk and juice until smooth; fold in whipped cream. Pipe into tart shells. Garnish with lime zest if desired. Serve immediately.

Notes

  • We experimented with fresh raspberries and lime zest.
