Homemade Gingerbread Pancakes

What better way to start off Christmas morning than with Homemade Gingerbread Pancakes?! Flavored with the aromatic spices of the holidays, it is the cozy cinnamon, cloves, ginger, and nutmeg that make these cakes a very special treat for breakfast!

Add in the wonderful taste of molasses and the magical and much sought after gingerbread flavor is created. These homemade pancakes are sure to please even the Grinch’s tummy and warm his heart!

How to make Homemade Gingerbread Pancakes

Ingredients

2 1/2 cups flour

2 tbsp. baking powder

1/2 tsp. salt

2 tsps cinnamon

1/4 tsp cloves

1 1/2 tsp ginger

1/2 tsp nutmeg, freshly microplaned if possible

2 large eggs

2 1/2 cups milk

1/4 cup brown sugar

3 tbsp. molasses

1 tsp vanilla

Directions

In a large bowl, combine the flour, baking powder, salt, cinnamon, cloves, ginger, and nutmeg. Whisk together to combine.

In a separate bowl, combine the eggs, milk, brown sugar, molasses, and vanilla. Whisk until thoroughly combined.

Pour the egg mixture into the dry ingredients, then whisk well to combine.

Heat your griddle to 350 F then spray with cooking spray if needed.

Using a 1/3 measuring cup, pour out 5-6 pancakes.

The batter is fairly thick, so watch for the air bubbles popping on the surface.

Check the bottoms of each pancake because you’re looking for a gorgeous golden brown then flip, and repeat.

TIP:

When measuring the molasses, spray the measuring spoon with cooking spray. This will ensure that the molasses comes right out of the spoon. Also, this is also a handy trick for peanut butter and honey.

You can store the cooked pancakes in the oven on Warm, while the rest are cooking.

Serve with butter, maple syrup, and freshly whipped cream, if desired. SImilarly, Garnish with orange slices.
