Needless to say, we love our crockpot because many a great meal has come from our beloved crockpot like our Crock Pot Christmas Brown Sugar Ham, Crockpot Pot Roast, and Crockpot Chicken and Dumplings!!

What do you get when you mix garlic, chicken, and lime in a crockpot?

A darn tasty meal, that’s what! We even impressed ourselves with how unbelievably moist and tender the chicken came out!

The combined flavors of the garlic and lime not only heightened the greatness of the chicken but also marinated it to fall apart, melt in your mouth goodness!

Ingredients

You will need the following ingredients:

  • 1 whole chicken (5 – 6 pounds), with any giblets removed.
  • 3-4 cloves of garlic, mashed
  • Pinch of Kosher salt (to help grind up the garlic)
  • 1/2 cup chicken broth
  • 1 lime, quartered
  • Kosher salt and pepper to taste.

  • Line the bottom of the crock pot with foil, for easier clean up. (Hey, anything to simplify things!)
  • Pat the chicken dry, and rub 2/3 of the garlic paste onto it.
    • Mix a pinch of kosher salt into the garlic cloves and mash into a paste.
  • Take the rest of the garlic paste and smear inside the cavity.
  • Take 2 pieces of lime, and juice them over the top of the garlic. After that, place the other 2 pieces into the cavity.
  • Optional: add several pats of butter to top off chicken.
  • Sprinkle with Kosher salt and pepper to taste.
  • Place into the crockpot, then add in the chicken broth.
  • Set on low and let cook for about 8 hours or until done with a light brown to the top.

We did add pats of butter to the top as well but it is not necessary…really, this food blog is exposing too much of our butter addiction!

Tips and safety

As always, use a meat thermometer to ensure the chicken is cooked thoroughly at an internal temp of 165 degrees F. For more information about food safety go here: https://www.foodsafety.gov/food-safety-charts/safe-minimum-cooking-temperature

Make sure your chicken is thawed out as well. Also, don’t forget to remove the innards!

We mention Kosher salt to help grind the garlic into a paste as it is coarser than table salt. That being said, feel free to use whatever salt you have on hand for taste.

Make it easier on juicing the lime by microwaving it for a few seconds at a time and then rolling it against the counter to help release the juices.

You can use reduced fat and sodium store bought chicken broth if you like. We used our Homemade Turkey Stock in this recipe and it sure adds depth to an already wonderful recipe!

We are in full swing prepping and baking our Christmas recipes for the blog. However, we still have to eat but the last thing we really want to do, after spending all day in the kitchen, is slave over a hot stove for ourselves
