Crock Pot Pork Loin Roast

Crock Pot Pork Loin Roast has a savory blend of thyme, garlic, soy and Worcestershire sauce, and lemon seasonings that add amazing flavor! Add in the paprika and a dash of salt and pepper to taste and this dish is delish.

Sear the pork loin roast before putting into the crock pot

We sear the pork loin roast prior to placing into the crockpot because this enhances and traps the natural flavors of the meat. In addition, we also rub the dried seasonings onto the meat prior to searing.

Hello Flavor!!

Usually you sear meat to give the surface a crust of sorts from all the proteins and sugars caramelizing on the surface. However, the crust does remain on the roast but is a softer crust due to being in the crock pot.

The seared meat and addition of such a savory blend of spices are then placed into the crock pot. All that is left is to add the remaining ingredients and chicken stock.

Chicken stock? In a crock pot pork loin roast recipe?

Heck ya! The chicken stock adds an additional layer of flavor. Plus, it’s better than just adding water. And the chicken stock does not overpower the flavor of the meat.

It’s all good people, it’s all good.

Check out our Homemade Turkey Stock to make your own homemade chicken stock. Yes, we know it is a turkey recipe but you can also use the same recipe for making your own chicken stock,

Otherwise, you can get a couple cans of chicken stock or broth from the grocery store.

Safety first

Safety tip: always use a meat thermometer to check that the meat is done. Better safe than sorry!

Confession time

So we had grand plans of a full New Years Day menu including some traditions and food history, but, alas, that did not happen. Somewhere along the way we not only lost track of time but also ran out of steam!

Behind the scenes view

Here is a funny behind the scene look at blogging! Yes, we have to hold up a special light and do some creative editing but it all works out!

Ah well, live and learn and plan better! There is always next year after all!

Our Crock Pot Pork Loin Roast is part of the New years day menu though it might be a bit late to plan to make it last minute. Sorry guys:(

New Years Day Pork

As mentioned in our Vasilopita St Basil’s Cake blog, there is a great many traditions that different cultures celebrate in order to usher in the new year. In addition, many beliefs focus on bringing good luck and prosperity to the person or family.

Pork is a sign of prosperity because pigs are usually fat and seem to always root around. That is to say, they keep on trucking and never give up!

Wrap up and conclusion on our Crock Pot Pork Loin Roast

While we are not into staying up late (we like sleep!!!) or following any traditions for the upcoming year, we are in love with this pork loin recipe!

It is easy to make with the crock pot doing most of the work. Okay, you will have to sear and spice the meat but then, you have free time on your hands!

The complex and varied seasonings add a savory and rich flavor to this dish! Make yourself some gravy (included in recipe below) and add your side dish and your meal is sure to be a hit!

We Love hearing from you and hope that 2021 is good to us all!

Crock Pot Pork Loin Roast is a savory blend of thyme, garlic, soy and Worcestershire sauce, and lemon seasonings that add amazing flavor!

Ingredients

  • 1 boneless pork loin roast (about 3 pounds)

  • 1 tbsp garlic powder

  • 1 tsp each of thyme and paprika

  • 1/2 tsp each of kosher salt and fresh ground black pepper

  • 2 tbsp olive oil

  • 1 1/2 cups chicken stock

  • 1/2 lemon (juiced; about 1 1/2 tablespoons)

  • 1 tsp Worcestershire sauce

  • 1 tsp soy sauce

  • 2 tbsp cornstarch

  • 2-3 tbsp milk or half and half ( for a creamy gravy. Water can be used as well )

Directions

  • Spray the bottom and sides of the crockpot. Mix the dried seasonings together in a small bowl. Pat the pork loin roast dry with paper towels. Sprinkle the seasoning mix all over the roast, and rub in.
  • Add the olive oil to a large skillet over med high heat. Sear the pork loin roast on all sides, for maximum flavor. Place the roast into the bottom of the crock pot.
  • Combine the chicken stock, lemon juice, Worcestershire sauce and soy sauce together, then pour around the roast. Cover and cook on low for 6 to 8 hours or on high for about 3 hours. Check the roast at the lower time for doneness to avoid overcooking. An instant-read thermometer should register at least 145 F (63 C).

  • Remove to a platter, and tent with foil to rest.

    To make gravy:
Pour the liquids from the crock pot into a small saucepan. Bring to a boil. Be sure to taste and season as needed. Mix together the cornstarch and milk, then add to the pan, whisking until sauce is thickened.
