We sear the pork loin roast prior to placing into the crockpot because this enhances and traps the natural flavors of the meat. In addition, we also rub the dried seasonings onto the meat prior to searing.

Hello Flavor!!

Usually you sear meat to give the surface a crust of sorts from all the proteins and sugars caramelizing on the surface. However, the crust does remain on the roast but is a softer crust due to being in the crock pot.

The seared meat and addition of such a savory blend of spices are then placed into the crock pot. All that is left is to add the remaining ingredients and chicken stock.

Heck ya! The chicken stock adds an additional layer of flavor. Plus, it’s better than just adding water. And the chicken stock does not overpower the flavor of the meat.

So we had grand plans of a full New Years Day menu including some traditions and food history, but, alas, that did not happen. Somewhere along the way we not only lost track of time but also ran out of steam!

As mentioned in our Vasilopita St Basil’s Cake blog, there is a great many traditions that different cultures celebrate in order to usher in the new year. In addition, many beliefs focus on bringing good luck and prosperity to the person or family.

Pork is a sign of prosperity because pigs are usually fat and seem to always root around. That is to say, they keep on trucking and never give up!

While we are not into staying up late (we like sleep!!!) or following any traditions for the upcoming year, we are in love with this pork loin recipe!

It is easy to make with the crock pot doing most of the work. Okay, you will have to sear and spice the meat but then, you have free time on your hands!

The complex and varied seasonings add a savory and rich flavor to this dish! Make yourself some gravy (included in recipe below) and add your side dish and your meal is sure to be a hit!
