This Lentil and Sweet Potato Curry is an absolute favorite of ours. It is a low-calorie vegetarian dinner, full of vibrant color and soul-warming flavor. And, it simmers in the crock pot, leaving us with time for other things.

Our Lentil and Sweet Potato Curry is chock full creamy lentils, aromatic spices, tender sweet potatoes, and coconut milk. Pure heaven, especially on a cold winter day. This dish is just amazing. We found ourselves impatiently waiting for bowls of it to be warmed up, it reheats perfectly, and tastes even better the next day.

The yumminess factor in this Lentil and Sweet Potato Curry is off the charts!! The levels of flavor on top of flavor from the spices are delightful, without being overly spicy. Tanya swore that she felt all warm and fuzzy eating this, and, she is right.

The lentils and sweet potatoes will calm the spices, making them warm and comforting. The addition of coconut milk right at the end also adds a unique creaminess, and will also tame the spices a bit. And, it is healthier than using actual cream to make this dish so creamy.

Lentil and Sweet Potato Curry is a low cal vegetarian dish with lentils, aromatic spices, tender sweet potatoes, and coconut milk.

Ingredients

  • 3 medium sweet potatoes, peeled and diced into 1-in pieces

  • 2 cups of dried lentils, rinsed, (we used green lentils in this recipe)

  • 1 small onion, diced

  • 3-4 cloves of garlic, finely chopped

  • 3 tbsp green curry paste

  • 1 1/2 tsp turmeric

  • 1 1/2 tsp garam masala

  • 1 tsp ground ginger

  • 1 tbsp light brown sugar

  • 1 tbsp kosher salt

  • 1 cup water

  • 4 cups of vegetable broth

  • 1 can tomato paste, 6 oz

  • 1 can coconut milk (light coconut will work just as well)

  • Lemon or lime wedges

  • Fresh Cilantro

Directions

  • Put the sweet potatoes, lentils, water, tomato paste, spices, onion, garlic, and vegetable stock into the crock pot. Mix just enough to combine ingredients. Cover and cook on low for 5 1/2 or 6 hours. Check doneness by sampling a piece of sweet potato and lentils. Season with salt and pepper if needed.
  • Pour in the can of coconut milk and put lid back on. Cook on low for another 30 minutes, to heat thru. Serve with Jasmine rice, brown rice, or even couscous. Garnish with lime and cilantro if desired. Enjoy!
